imagemagick: (chore) Remove post_install renaming ffmpeg

Fixes this error when installing:
Rename-Item: Cannot find path '~\scoop\apps\imagemagick\current\ffmpeg.exe' because it does not exist.

Description also tidied up and updated notes to reflect this change.
